Will this clutch hold up to 600+lbs torque and if so how much more is it rated for?

Ram rates the HDX series of clutches to hold up to 450 ft/lbs. Your application would require at least a Powergrip HD clutch which has a rating up to 650 ft/lbs. Keep in mind that the Powergrip HD clutch should only be used on a billet steel or aluminum flywheel and that you may experience some chatter at low RPM if your vehicle as higher (lower numerically) rear gears.

Depending on the year model of your Mustang, I would recommend one of the following flywheels.
1986-1995
